This document covers cube cutting machines and accessories.
1.1 This document specifies requirements for the design and manufacture of cubes cutting machines (see Figures 1 to 6 and 12 to 18).
The machines covered by this document are used to size reduce fresh meat, meat products and products of the same kind by cutting in a cutting unit.
This document deals with all significant hazards, hazardous situations and events relevant to machines, appliances and machinery, when they are used as intended and under conditions of misuse which are reasonably foreseeable by the manufacturer (see Clause 4).
This document deals with the hazards which can arise during commissioning, operation, maintenance and de-commissioning of the machine.
This document is not applicable to cubes cutting machines which are manufactured before the date of publication of this document by CEN.
1.2 This document covers the following types of cubes cutting machines:
- Cubes cutting machines with a forward feed plunger, a lattice and a sickle blade with loading by hand (see Figure 2)
- Cubes cutting machines with a forward feed plunger, a lattice, a sickle blade, a feed intake hopper and a loading device (see Figure 1)
- Cubes cutting machines with a rotating cutting tool, a multi-segment blade and a feed conveyor (see Figures 3 and 5)
- Cubes cutting machines with a rotating cutting tool and centrifugal force loading (see Figure 6)
1.3 Machine construction
Cubes cutting machines are constructed of a machine frame, a feed intake chamber/magazine, a forward feed plunger or nip roller, a lattice or a rotating cutting tool, a sickle or multi-segment blade, an associated drive and electrical, hydraulic and pneumatic components, depending on machine type.
Cubes cutting machines in the scope of this document may be equipped with:
- a lid over the feed intake chamber/magazine;
- a transfer car for the sickle blade/multi-segment blade, cutting blade and lattice;
- a loading device;
- a feed

1.1 Diese Europäische Norm legt Anforderungen an die Konstruktion und Herstellung von Würfelschneidemaschinen

werden (siehe Abschnitt 4)."
Diese Norm behandelt Gefährdungen, welche während der Inbetriebnahme, des Betriebs, der Wartung und
der Außerbetriebnahme der Maschine auftreten können.
Dieses Dokument gilt nicht für Würfelschneidemaschinen, die hergestellt wurden, bevor CEN dieses
Dokument veröffentlichte.
1.2 Diese Norm umfasst folgende Bauarten von Würfelschneidemaschinen:

1.1 Le présent document spécifie les prescriptions relatives à la conception et à la fabrication des machines à couper en cubes (voir Figures 1 à 6 et 12 à 18).
Les machines couvertes par le présent document sont utilisées pour couper en morceaux dans une unité de coupe la viande fraîche, les produits carnés et les produits de même nature.

- Les machines à couper en cubes équipées d’un poussoir, d’une grille de coupe et d’un couteau faucille avec chargement manuel (voir Figure 2).
- Les machines à couper en cubes équipées d’un poussoir, d’une grille de coupe, d’un couteau faucille, d’une trémie d’alimentation et d’un dispositif de chargement (voir Figure 1).
- Les machines à couper en cubes équipées d’un outil de coupe rotatif, d’une lame multi-segments et d’un convoyeur d’alimentation (voir Figures 3 et 5).
- Les machines à couper en cubes équipées d’un outil de coupe rotatif et d’un chargement par force centrifuge (voir Figure 6).

The product to be cut is fed manually or by the loading device/feed conveyor into the feed intake chamber. The product is fed to the cutting unit by the forward feed plunger and/or by the nip roller or by centrifugal force and size reduced. Although it should be advised against, the document, taking into account practice, deals with the hazards due to cleaning with pressurised water. 2 Normative references The following referenced documents are indispensable for the application of this document. EN ISO 13857, the manufacturer shall carry out a risk assessment to establish the requirements of the type
B-standard. This specific risk assessment shall be part of the general risk assessment of the machine." Where the means of reducing the risk is by the physical arrangement or positioning of the machine the manufacturer shall include in the Information for use a reference to the reduction means to be provided, and to any limiting value of the requirement, and, if appropriate, to the means of verification. Where the means of reducing the risk is by a safe system of work, the manufacturer shall include in the Information for use details of the system and of the elements of training required by the operating personnel. 5.2 !Introduction" Cubes cutting machines shall be designed and constructed in accordance with annex C and the conditions mentioned below. !Unless otherwise stipulated in other sub-clauses, the interlocking systems of guards shall comply with 4.2.1 of EN 1088:1995 (interlocking without guard locking) and the safety related parts of the control system shall present at least a performance level “c” in accordance with EN ISO 13849-1:2008." The interlocking devices shall be incorporated in the machine housing and correspond to 5.7 of EN 1088:1995. NOTE This requires: to fulfil hygienic requirements; to protect against mechanical damages; to protect against the effects of cleaning and disinfecting materials; to protect against the effects of cleaning fluids (water); to protect against tampering by simple methods. Zone 2 Rotating cutting tool and lattice 5.2.1.3 Access to danger points on cutting tools and lattice shall be prevented by enclosing guards in compliance with EN 953. If the enclosing guard is open, the sickle blade shall be prevented from any unintentional movement. It shall be stated clearly in the instruction for use that ”Protective gloves against knife cuts shall be worn“ when changing the cutting tools and when carrying out any work in the vicinity of the cutting tools. Zone 6 Drive mechanism 5.2.1.7 Access to danger points at the drive mechanism shall be safeguarded by the provision of fixed or interlocked movable guards according to 3.2 and 3.5 of EN 953:1997. If guards need to be opened for changing the operating process or for cleaning purposes, they shall be interlocked. The interlocking system shall be according to 5.2. SIST EN 13871:2005+A1:2010
EN ISO 13849-1:2008 (see Figure 15)." The forward feed plunger or closure gate shall come to a standstill at the latest 2 s after the step or the tread surface, ladder has been brought into protective position. 5.2.2.4 With hopper edge heights ≥ 1 600 mm, means to look into the feed intake hopper (e.g. mirror, fill level indicator, ladder or step) shall be provided. Zone 2 Rotating cutting tool and lattice 5.2.2.5 Access to danger points on cutting tools and lattice shall be prevented by enclosing guards in compliance with EN 953. The enclosing guards shall be designed to prevent penetration by ejected parts as e.g. blades. Movable enclosing guards over danger points shall be interlocked according to 5.2. Zone 3 Rotating sickle blade behind the cutting chamber door and the multisegment blade at the discharge 5.2.2.6 Access shall be prevented at least by one of the following possibilities: cutting chamber door, without container (see Figure 14); combination of cutting chamber door and container (see Figure 13); combination of cutting chamber door and transport trolley (see Figure 15). The cutting chamber door shall be interlocked according to 5.2 5.2.2.7 If containers or transport trolleys or connecting machines or appliances are used for preventing access, these shall be interlocked so, that the function of the machine is stopped, when these elements are recovered, or the danger points shall automatically be covered, when these elements are removed. Interlocking of the container is not required on the discharge side if (see Figure 14): the distance from the floor to the lower edge of the sickle blade housing is not more than 320 mm and the safety distance between the lower edge of the sickle blade housing and the radius of rotation of the sickle blade is at least 230 mm.
