Pasta processing plants - Dryers and coolers - Safety and hygiene requirements
This European Standard applies to shaker pre-dryers, belt dryers, rotary dryers, nest pasta dryers, long pasta dryers and coolers (see clause 3), used in continuous pasta processing plants able to produce more than 100 kg/h.
This European Standard specifies the safety requirements for the design, manufacture and information for use for the machines mentioned above, known with the name of dryers and coolers, classified as stationary units which cannot be moved when in operation.
This European Standard is not applicable to dryers and coolers, static or semiautomatic requiring manual loading as well as those for special application (i.e. experimental dryers).
Dryers in a pasta plant are machines which to reduce moisture by means of warm air ventilation. In the drying process the use of a cooler might be necessary in order to reduce the temperature, maintaining constant the correct moisture of the pasta. The cooling can be obtained in the dryer or in a separate similar machine.
The significant hazards covered by this standard are listed in clause 4.
These hazards, as well as the measures for their reduction, are described in the present European Standard
Ancillary equipment, which is not an integral part of the machinery (e.g. hoppers, conveyors, equipment used to produce hot or cold fluids, etc), is not covered by this European Standard.
This European Standard is not applicable to machines in its scope which are manufactured before the date of its publication as EN.

Diese Europäische Norm gilt für Schüttelvortrockner, Bandtrockner, Trommeltrockner, Nesttrockner, Trockner für lange Ware und Kühler (siehe Abschnitt 3), die in kontinuierlich arbeitenden Teigwarenherstellungsanlagen mit einer Produktionsleistung von mehr als 100 kg/h verwendet werden.
Dies Europäische Norm spezifiziert die Sicherheitsanforderungen für die Konstruktion und die Herstellung sowie für die Benutzerinformation aller oben genannten Maschinen, die unter den Bezeichnungen Trockner und Kühler bekannt sind, klassifiziert als stationäre Anlagen, die während des Betriebes nicht bewegt werden können.
Diese Europäische Norm ist nicht anwendbar auf statische oder halbautomatisch arbeitende Trockner und Kühler, mit manueller Beschickung oder für besondere Anwendungen (z. B. Experimental-Trockner).
Trockner in einer Teigwarenherstellungsanlage sind Maschinen, deren Zweck es ist, den Feuchtigkeitsgehalt mittels zirkulierender Warmluft zu reduzieren. Beim Trocknungsvorgang kann die Verwendung eines Kühlers notwendig sein, um die Temperatur zu reduzieren, wobei der richtige Feuchtigkeitsgehalt der Teigwaren auf einem konstanten Niveau gehalten wird. Die Kühlung kann entweder im Trockner oder in einer separaten ähnlichen Maschine erreicht werden.
Die signifikanten von dieser Norm erfassten Gefährdungen sind in Abschnitt 4 aufgeführt.
Diese Gefährdungen sowie die Maßnahmen für deren Reduzierung sind in dieser Europäischen Norm beschrieben.
Hilfseinrichtungen, die nicht Bestandteil der Anlage sind (z. B. Trichter, Förderbänder, Einrichtungen zum Erzeugen heißer oder kalter Flüssigkeiten usw.), werden nicht von dieser Europäischen Norm erfasst.

La présente Norme européenne s’applique aux pré-séchoirs à secousses, séchoirs à tapis, rotatifs, à alvéoles, pour le séchage et le refroidissement des pâtes (voir Article 3) utilisés dans les installations de production en continu des pâtes alimentaires pouvant produire plus de 100 kg/h.
La présente Norme européenne spécifie les prescriptions de sécurité relatives à la conception, à la fabrication et aux spécifications pour l'utilisation des machines susdites, désignées sous le nom de séchoirs et refroidisseurs, classées dans la catégorie des unités fixes qui ne peuvent donc être déplacées pendant leur fonctionnement.
La présente Norme européenne ne s'applique pas aux séchoirs et refroidisseurs statiques ou semi-automatiques nécessitant un chargement manuel, ni à ceux destinés à une application particulière (exemple : séchoirs expérimentaux).
Les séchoirs utilisés dans une installation pour pâtes alimentaires sont des machines destinées à réduire l'humidité à l'aide d'une ventilation à l'air chaud. L'utilisation d'un refroidisseur peut être nécessaire au cours de l'opération de séchage afin d'abaisser la température, en maintenant constante la teneur en eau choisie des pâtes. Le refroidissement peut être obtenu dans le séchoir ou dans un équipement analogue distinct.
La liste des phénomènes dangereux significatifs couverts par la présente norme figure à l'Article 4.
Ces phénomènes dangereux ainsi que les mesures à prendre pour les limiter sont décrits dans la présente Norme européenne.
La présente Norme européenne ne traite pas des équipements auxiliaires qui ne font pas partie intégrante des machines (par exemple trémies, convoyeurs, des équipements utilisés pour produire des fluides chauds ou froids, etc.).

Parts jutting out of the basic outline of the machine (e.g. motors or gearbox, valves and pipes of the heating, cooling and humidifying plants) may cause hazards of cutting or severing of body parts, head impact, slipping, tripping and falling with consequent broken bones, see zone 1 figures 2 and 3. 4.2.3 Moving parts
4.2.3.1 Moving parts for pasta conveyance systems, such as sticks, belts, drums, frames, and other containers, may cause hazards of entanglement, cutting, severing and shearing of fingers, hands, arms, and the body; see zone 2, figures 1, 2 and 3. 4.2.3.2 Moving parts for driving systems such as chains, gears, shafts, etc, may cause hazards of entanglement, cutting, severing, and shearing of fingers or hands; see zone 3, figures 1, 2 and 3. 4.2.3.3 Fan blades may cause hazards of cutting of fingers, hands, arms, or other parts of body. 4.2.3.4 Rotating drums may cause hazards of crushing of the body when falling from supports. 4.2.3.5 Moving parts of air inlet and outlet gates may cause hazards of cutting or severing of fingers and hands. 4.2.4 Mobile parts Panels of insulation booth may cause hazard of crushing of fingers, arms, or other parts of the body, and ejection of hot air or fluid, which may cause injury to the head or other parts of the body;
see zone 4 figures 1, 2 and 3. 4.2.5 Openings 4.2.5.1 Openings like entrance doors for cleaning and maintenance operations may cause hazards of crushing, cutting or severing of fingers, arms and other parts of the body, trapping of the operator in the booth and hot air and fluid ejection; see zone 5 figures 2 and 3. 4.2.5.2 Openings for drawing samples may allow contact with moving parts inside the insulation booth with hazard of entanglement, cutting of fingers and hands; hot air or fluid ejection, may cause injury to hands, arms and face. See zone 5 figures 2 and 3. 4.2.5.3 Openings for air inlet and outlet may cause hazard of hot air ejection with consequent injury to hands, arms and other parts of the body. 4.2.6 Fluid ejection hazards Failure of heating pipes under hydraulic pressure and failure of power, hydraulic and pneumatic systems may cause hazard of ejection of fluid which may cause injury. 4.2.7 Hazards due to unexpected start or failure of emergency device Unexpected start up or failure of emergency device may cause hazard of contact with dangerous moving parts, with the consequences listed in !4.2", !4.3", !4.4". 4.3 Electrical hazards Hazards of electric shock from direct or indirect contact with live components. 4.5 Noise hazard Noise generated by dryers and coolers can lead to permanent loss of hearing, ringing in the ears, fatigue, stress, interference with speech communication, acoustic signals. 4.6 Vibration hazard Vibrations transmitted to the framework by moving parts, vibrating tables and vibrating feeders and distributors. 4.7 Hazard due to slip, trip and fall Walkways, stairs and gangways may cause slip, trip and fall with possibility of broken bones. 4.8 Hazard due to neglecting of hygienic principles Neglecting of hygienic principles may cause a hazard to human health and unacceptable modification of foodstuff (e.g. contamination by microbial growth or foreign materials and pests). 4.9 Harmful substance The use of cleaning agent may cause harm to the skin, eyes and respiratory system by direct contact or by ingestion. 5 !Safety requirements and/or protective measures"
! 5.1 General" !Machinery shall comply with the safety requirements and/or protective measures of this clause. In addition, the machine shall be designed according to the principles of EN ISO 12100 for relevant but not significant hazards, which are not dealt with by this document."
5.2 Mechanical hazards 5.2.1 Protruding parts (see figure 4) Collision with protruding parts shall be prevented by a handrail. The handrail is required where the protruding parts are less than 2500 mm from the access level (h), sticking out for more than 300 mm (s), and less than 1000 mm high (l). SIST EN 13289:2002+A1:2013

5.2.2 Moving parts 5.2.2.1 !Access to moving parts for pasta conveyance systems defined in 4.2.3.1 and external to insulation booth shall be prevented with fixed guards in accordance with EN 953:1997+A1:2009, 3.2. Fixing systems for fixed guards shall remain attached to these parts or to the machine when the guards are removed." If the moving parts for pasta conveyance are reachable from the openings, the guard shall be in accordance with !5.2.4". 5.2.2.2 !Moving parts for drive systems defined in 4.2.3.2 and external to insulation booth shall be protected with fixed guards in accordance with EN 953:1997+A1:2009, 3.2. Fixing systems for fixed guards shall remain attached to these parts or to the machine when the guards are removed." 5.2.2.3 !Fan blades placed inside the insulating panels that cannot be reached through openings could be unguarded if the insulating panels are fixed. Fan blades external to insulation booth shall be protected with fixed guards in accordance with EN 953:1997+A1:2009, 3.2. Fixing systems for fixed guards shall remain attached to these parts or to the machine when the guards are removed." SIST EN 13289:2002+A1:2013
the dryer (see 7.1 “Information for use”), shall be protected with panels fixed with screws or bolts or keys, and fitted with supporting devices which maintain the !panel"n stable in the open position. The panel shall be also fitted with a device keeping it locked in the open position during maintenance. !Fixing systems for fixed guards shall remain attached to these parts or to the machine when the guards are removed." 5.2.4.3 Openings fitted with movable guards (or meshes) shall be permitted for sample drawing. The sample drawing shall be carried out using special tools, supplied by the manufacturer, or by hand following the instructions given by the manufacturer. These openings shall also be equipped with a trip device !as described in EN ISO 12100:2010, 3.28.5" that warns the operator, before he overpasses the safety limit and stops the moving part. The transparent port-holes used for checking operations shall be made of a material resistant to sudden heat changes and to crushing: to avoid breaking port-holes shattering into small pieces. 5.2.4.4 Openings for air inlet and outlet shall be positioned on the top of the dryer, and the air shall not be directed towards platform or walkway passages.
5.2.5 Fluid ejection Water, superheated water, steam and diathermic oil piping systems together with their intercepting and controlling devices shall be designed for a pressure 1,5 times of the maximum working pressure. Manually operated valves shall be fitted at the interface between the dryer/cooler and the incoming supplies. The valves shall be fitted with a trapped device. Hydraulic and pneumatic systems shall be designed and manufactured according to !EN ISO 4413:2010" and !EN ISO 4414:2010". SIST EN 13289:2002+A1:2013
