Overview
EN IEC 60335-2-39:2024/A11:2024 is a CLC/CENELEC amendment that defines safety requirements for commercial electric multi‑purpose cooking pans (not intended for household use). It covers electrically operated appliances used in restaurants, canteens, hospitals, bakeries, butcheries and similar commercial settings. Rated voltages are limited to ≤ 250 V for single‑phase (phase‑to‑neutral) and ≤ 480 V for other supplies. The amendment A11 updates Part 2-39 (2024) and supplements Part 1 requirements where applicable.
Key topics and technical requirements
- Scope & intended use: Focus on reasonably foreseeable hazards for users and installers; excludes general household child use and acknowledges vulnerable persons may need higher protection.
- Marking & instructions: Instructions must include safety warnings (e.g., “CAUTION: Read the instructions before using the appliance”), maximum empty weight, intended use, operator training/maintenance guidance, and warnings about slippery floors and hot food splatter. Table‑top units must specify a support height so working height is between 695–980 mm.
- Protection against live parts: Access tests apply; some probes (e.g., probe 18) are only required if the appliance is intended for public areas.
- Construction & lids: Lids require at least one handle; lids must be held open (e.g., hinge with click stop, counterbalance, or open ≥ 100°). A 20 N test is used to verify lids do not fall back.
- Ergonomics & controls: Rear edge of pan max 850 mm from front; controls visible, identifiable, within easy reach, min height 350 mm, and protected against accidental actuation.
- Hygiene & cleaning: Hygiene provisions reference EN 1672-2 and include food/splash/non‑food area categorization. Fluid category rules per EN 61770 apply depending on presence of cleaning system (Fluid Category 2 or 3).
- Power‑driven parts & mechanical safety: Additional Annex ZE requirements for appliances with moving parts (e.g., safe lifting mechanisms, interlocks, endurance: 5 000 guard cycles at 5 cycles/min where applicable).
- Noise: Emission sound pressure level considered acceptable at LpA ≤ 70 dB(A).
Applications and users
- Manufacturers and designers of commercial cooking equipment (multi‑purpose pans, sauteuses)
- Product safety engineers, compliance officers, and test laboratories performing CE/market‑access testing
- Procurement/specification teams in catering, hospitality, institutional food service, and commercial kitchens
- Regulatory and conformity assessment bodies in Europe
