Overview
EN 60335-2-42:2003/A12:2024 (CLC/CENELEC amendment A12, 2024) is the European safety standard for commercial electric forced convection ovens, steam cookers and steam‑convection ovens (non‑household appliances). It covers reasonably foreseeable hazards in installation and use for commercial environments (restaurants, canteens, hospitals, bakeries, butcheries, etc.). Rated voltage limits in the scope are ≤250 V for single‑phase (phase to neutral) and ≤480 V for other appliances. This amendment updates marking, construction, hygiene and other safety requirements for CE and national conformity.
Key topics and technical requirements
- Scope & exclusions: Clarifies users considered (not normally accounting for children playing), and notes the standard does not address noise as a hazard beyond setting LpA ≤ 70 dB(A).
- Marking & instructions: New requirements to include maximum empty weight, intended use, operator training/maintenance guidance, safe adjustment procedures, stability conditions, accident/breakdown operating method, PPE guidance for hot food spread, and warning about slippery floors. Front cover must include a CAUTION notice (or equivalent ISO symbols).
- Protection against live parts: Test probe 18 (access probe) is not applicable unless the appliance is installed in an area open to the public.
- Endurance: The Part 1 endurance clause is declared not applicable in this Part 2 (per amendment).
- Stability & ergonomics: Working height 200–1800 mm; usable interior depth max 850 mm; operator controls minimum 500 mm height (floor‑standing), clearly visible, reachable and protected against accidental actuation.
- Construction & fluids: Fluid Category per EN 61770 - Category 2 for appliances without cleaning systems, Category 3 with cleaning systems.
- Hygiene (Annex ZAA): Defines food, splash and non‑food areas, material and joint requirements, and temperature‑based exceptions (e.g., exceptions where surfaces reach ≥82 °C or >100 °C during normal operation). Cleaning, fasteners and accessibility requirements are specified with allowances when manufacturer documents hygiene procedures.
Applications - who uses this standard
- Manufacturers and product designers - design ovens and steam units to meet EU safety and hygiene expectations.
- Test laboratories & conformity assessors - perform safety testing and verification for CE marking and national implementation.
- Procurement & facility managers - specify compliant commercial kitchen equipment for restaurants, hospitals, bakeries, canteens and other collective catering environments.
- Safety engineers & technical writers - prepare manuals, user instructions and maintenance procedures to satisfy marking and instruction clauses.
Related standards
- EN 60335-1 (Part 1 general requirements)
- EN 61770 (fluid categorization and related amendments)
- EN 1672-2 (hygiene - incorporated with modifications)
- Relevant ISO/IEC symbols and test probe standards referenced (ISO 7000, IEC 61032)
This amendment (A12:2024) refines practical safety, hygiene and ergonomic expectations for commercial ovens and steam equipment - essential for compliance, safe operation and procurement in professional catering environments.
