Diese Internationale Norm legt ein Verfahren zur Bestimmung der Alkalität von tierischen und pflanzlichen Fetten und Ölen ohne Unterscheidung zwischen den verschiedenen Bestandteilen fest. Das Verfahren ist nicht anwendbar auf trocken geschmolzene tierische Fette und Öle und auf Fette und Öle mit einer Acidität über 60 % (Massenanteil), bestimmt nach ISO 660.
ANMERKUNG Fette und Öle können alkalische Bestandteile enthalten, entweder natürlichen Ursprungs (z. B. Calciumseifen aus Knochen) oder durch zufällige Zusätze (z. B. Natriumseifen in ungenügend raffinierten Fetten und Ölen).
