Overview
EN 60335-2-39:2003 - published by CENELEC/CLC - is the European safety standard for commercial electric multi-purpose cooking pans (sauteuses) that are not intended for household use. It supplements EN 60335-1 (General requirements) and aligns with IEC 60335-2-39:2002. The standard covers electrically operated commercial pans with rated voltages up to 250 V for single‑phase appliances (phase to neutral) and 480 V for other appliances. It includes the electrical parts of appliances that also use other energy sources. The document was approved 2003-02-01, replaces the 2000 edition, and incorporates the September 2007 corrigendum.
Key topics and requirements
- Scope and definitions: Clarifies which commercial multi-purpose cooking pans are covered (restaurants, canteens, hospitals, bakeries, butcheries, etc.) and excludes household appliances.
- Use with EN 60335-1: This Part 2 document supplements or modifies clauses of the general Part 1 standard; wherever Part 2 is silent, Part 1 applies.
- Electrical safety: Requirements for insulation, earthing, rated voltages (≤250 V single-phase; ≤480 V others), and protection against electrical hazards.
- Risk coverage: Confirms risks are primarily electrical and covered under the Low Voltage Directive (73/23/EEC); where mechanical moving parts exist, a risk assessment has shown Machinery Directive requirements are largely met by this standard.
- Conformance and testing structure: Uses the Part 1/Part 2 numbering system and specifies how additional clauses, notes, and annexes are numbered or prefixed.
- Harmonization: Endorsed by CENELEC and intended for national adoption without modification.
Practical applications
- Ensures safe design, manufacture and testing of commercial electric multi-purpose pans used in professional kitchens.
- Guides product design for electrical protection, labeling, and intended use in commercial foodservice environments.
- Provides baseline requirements for safety testing and documentation required for market access in CENELEC member countries.
Who should use this standard
- Appliance manufacturers and design engineers for commercial cooking equipment
- Test laboratories and conformity assessment bodies
- Compliance officers, certification bodies and notified bodies
- Procurement managers and safety officers in restaurants, hospitals and institutional kitchens
- Regulatory affairs specialists ensuring Low Voltage Directive compliance
