Diese Internationale Norm legt drei Verfahren (zwei titrimetrische und ein potentiometrisches) zur Bestimmung der Azidität in tierischen und pflanzlichen Fetten und Ölen, die im folgenden als Fette bezeichnet werden, fest. Die Azidität wird vorzugsweise als Säurezahl ausgedrückt, alternativ als konventionell berechnete Azidität. Das in Abschnitt 4 beschriebene Verfahren ist das Referenzverfahren. Das in Abschnitt 5 beschriebene Verfahren gilt für Fette und Öle, die keine starke Färbung aufweisen. Die Verfahren sind auf Wachse nicht anwendbar.
