Diese Norm legt die Sicherheits- und Hygieneanforderungen für die Gestaltung und Fertigung von Teigausrollmaschinen fest, die in der Nahrungsmittelindustrie und im Gewerbe (Bäckereien, Konditoreien, Süßwarenindustrie, Brotfabriken, Konfekthersteller, Feinkostherstellung, Großküchen etc.) zur Verringerung der Dicke einer Teig- oder Kuchenmasse durch Ausrollen. Dieser Vorgang wird im allgemeinen ausgeführt durch Ausrollen des Teiges zwischen den Walzen unter Verringerung der Dicke, indem der Walzenabstand angepaßt wird. Diese Vorgänge können entweder manuell oder automatisch ausgeführt werden.

L'opération est généralement réalisée par laminage en un mouvement de va et vient entre les cylindres dont on réduit progressivement l'écartement, par réglage manuel ou automatique.
