Dieses Dokument legt ein horizontales Verfahren für die Zählung von nach aerober Bebrütung bei 30 °C in einem festen Medium wachsenden und Kolonien bildenden Mikroorganismen fest.
Das in diesem Dokument beschriebene Verfahren ist anzuwenden für:
- Produkte, die für den menschlichen Verzehr vorgesehen sind;
- Produkte, die als Futtermittel vorgesehen sind;
- Umgebungsproben im Bereich der Herstellung und Handhabung von Lebensmitteln und Futtermitteln; und
- Proben aus dem Bereich der Primärproduktion.
Dieses Verfahren eignet sich unter anderem für die Zählung von Mikroorganismen in Testproben und basiert auf einem Minimum von 10 Kolonien, die auf einer Platte gezählt werden. Dies entspricht einem Kontaminationsgrad, der höher als 10 KBE/ml bei flüssigen Proben bzw. höher als 100 KBE/g bei festen Proben erwartet wird.
Dieses Verfahren ist besonders geeignet für:
- Produkte, bei denen eine zuverlässige Keimzählung erforderlich ist, wenn eine niedrige Bestimmungsgrenze gilt;
- Produkte, bei denen zu erwarten ist, dass sie schwärmende Kolonien (Laufkolonien) enthalten, die Kolonien anderer Organismen verschleiern, z. B. Milch und Milchprodukte, die wahrscheinlich schwärmende Bacillus spp. enthalten;
- Produkte, von denen erwartet wird, dass sie sauerstoffempfindliche Bakterien enthalten, z. B. einige Milchflora, die sich während der Haltbarkeit oder der Lagerung in veränderter Atmosphäre entwickeln.
Dieses horizontale Verfahren wurde ursprünglich für die Untersuchung von Proben aus der Lebensmittelkette entwickelt. Durch die hohe Vielfalt der Produkte innerhalb der Lebensmittelkette, besteht die Möglichkeit, dass dieses horizontale Verfahren nicht für alle Produkte im Detail geeignet ist. Es wird jedoch erwartet, dass die erforderlichen Änderungen so gering wie möglich gehalten werden, damit sie nicht zu einer signifikanten Abweichung von diesem horizontalen Verfahren führen.
Auf der Grundlage der zum Zeitpunkt der Veröffentlichung dieses Dokuments verfügbaren Informationen wird die Eignung dieses Verfahrens für die Untersuchung bestimmter fermentierter Lebens- und Futtermittel als begrenzt angesehen und andere Medien oder Bebrütungsbedingungen können geeigneter sein. Dennoch kann dieses Verfahren auf derartige Produkte angewendet werden, selbst wenn die Möglichkeit besteht, dass die vorherrschenden Mikroorganismen in diesen Produkten nicht effektiv nachgewiesen werden.

This document (EN ISO 4833-1:2013/A1:2022) has been prepared by Technical Committee ISO/TC 34
"Food products" in collaboration with Technical Committee CEN/TC 463 “Microbiology of the food
chain” the secretariat of which is held by AFNOR.
This Amendment to the European Standard EN ISO 4833-1:2013 shall be given the status of a national
standard, either by publication of an identical text or by endorsement, at the latest by July 2022, and
conflicting national standards shall be withdrawn at the latest by July 2022.
