Food processing machinery - Catering attachments for machines having an auxiliary drive hub - Safety and hygiene requirements
1.1 This European Standard specifies the safety and hygiene requirements for the design and manufacture of the following catering attachments intended to be connected to an auxiliary drive hub of machines used in catering (mainly but not exclusively planetary mixers) and to be used in the commercial and institutional catering industry:
- vegetable cutters and cheese graters;
- worm type attachments:
- fruit squeezers;
- meat mincers;
- pasta extruders;
- coffee grinder;
- strip cutters;
- planetary mixers and whippers;
- potato-mashers.
1.2 This European Standard deals with all significant hazards, hazardous situations and events relevant to catering attachments, when they are used as intended and under the conditions of misuse which are reasonably foreseeable by the manufacturer. It deals with the hazards due to the use, the maintenance, the cleaning, removal of jammed food, feeding and changing the tool (see Clause 4).
1.3 This European Standard is not applicable to:
- catering attachments which are exclusively part of the equipment of the machines they are intended for (as optional or standard equipment);
- the driving machines for which the attachments are intended (but the standard deals with the interface of the attachments with these machines);
- attachments including electrical equipment.
1.4 Noise is not dealt with in this European Standard.
1.5 This European Standard is not applicable to catering attachments which are manufactured before the date of its publication as EN.

1.1 Diese Europäische Norm legt die Sicherheits- und Hygieneanforderungen für die Gestaltung und Herstellung nachstehend aufgeführter Großküchenvorsatzgeräte (hauptsächlich, jedoch nicht ausschließlich Planetenrührmaschinen) fest, die in der gewerblichen und institutionellen Versorgungsindustrie im Hotel- und Gaststättengewerbe eingesetzt werden:
- Gemüseschneider und Käseraspler;
- Schneckenvorsatzgeräte:
- Obstpressen;
- Fleischwölfe;
- Nudelpressen;
- Kaffeemühlen;
- Streifenschneider;
- Planetenrühr- und -knetmaschinen;
- Kartoffelstampfer.
1.2 Diese Europäische Norm behandelt sämtliche signifikanten Gefährdungen, Gefährdungssituationen und Gefährdungsereignisse an Vorsatzgeräten, sofern diese bestimmungsgemäß oder unter vom Hersteller vernünftigerweise vorhersehbaren Bedingungen falsch angewendet werden. Sie behandelt Gefährdungen, die bei Gebrauch, Instandhaltung und Reinigung der Geräte sowie bei der Beseitigung von hängen gebliebenen Lebensmittelresten beim Befüllen des Geräts und Auswechseln des Werkzeugs (siehe Abschnitt 4) entstehen.
1.3 Diese Europäische Norm ist nicht anwendbar auf:
- Vorsatzgeräte, die ausschließlich Ausrüstungsteil der Maschinen sind, für die sie (als optionale oder Standardausrüstung) bestimmt sind;
- die Antriebsaggregate, für die die Vorsatzgeräte bestimmt sind (diese Norm behandelt jedoch die Schnittstelle zwischen den Vorsatzgeräten und Maschinen);
- Vorsatzgeräte mit elektrischer Ausrüstung.
1.4 Lärm wird in dieser Europäischen Norm nicht behandelt.
1.5 Diese Europäische Norm ist nicht anwendbar auf Vorsatzgeräte, die vor der Veröffentlichung dieser Norm als EN-Norm hergestellt wurden.

1.1 La présente Norme européenne spécifie les prescriptions d'hygiène et de sécurité pour la conception et la
fabrication des accessoires suivants, destinés à être connectés à la prise de mouvement auxiliaire des machines
(principalement, mais non exclusivement les batteurs-mélangeurs) utilisées dans la restauration commerciale
et collective :
- les coupe-légumes et les râpes à fromage ;
- les accessoires à vis sans fin ;
- les presse-fruits ;
- les hachoirs ;
- les extrudeuses de pâtes alimentaires ;
- les moulins à café ;
- les découpeuses en lanières ;
- les mélangeurs et les fouets à mouvement planétaire ;
- les presse-purée.
1.2 La présente Norme européenne traite de tous les phénomènes dangereux, situations et événements
dangereux correspondant aux accessoires, lorsqu'ils sont utilisés dans des conditions normales et dans des
conditions de mauvaise utilisation raisonnablement prévisibles par le fabricant. Il traite des phénomènes dangereux
dus à l'utilisation, à la maintenance, au nettoyage, au retrait d'aliments coincés, à l’alimentation et au remplacement
de l'outil concerné (voir article 4).
1.3 La présente Norme européenne ne s’applique pas aux :
- accessoires qui font exclusivement partie intégrante des équipements des machines pour lesquelles ils sont
destinés (en qualité d'équipements optionnels ou de série) ;
- machines d'entraînement pour lesquelles sont destinés les accessoires (la norme traite toutefois de l'interface des
accessoires avec ces machines) ;
- accessoires comprenant des équipements électriques.
1.4 La présente Norme européenne ne traite pas du bruit.

List of significant hazards 4.1 General This clause contains all the significant hazards, hazardous situations and events, as far as they are dealt with in this document, identified by a risk assessment as significant for catering attachments, and which require action to eliminate or reduce the risk. Before using this document, it is important to carry out a risk assessment of the catering attachment to check that its significant hazards are identified in this clause. 4.2 Mechanical hazards 4.2.1 For vegetable cutters and cheese graters Access to cutting/grating tool through the hopper and discharge area. A permanent sign shall be affixed to the attachment for reminding that the cutter depth shall not be higher than 8 mm; a cutter diameter (D) of maximum 230 mm; a feed inlet circumscribed diameter (d) of maximum 150 mm; the provision of a pusher device that descends by gravity for covering the feed inlet and that is shaped to the contours of the hoppers with a maximum clearance of 4 mm. " Figure 8 — Safety signs 5.2.1.2 Safeguards against access to the danger zone by opening up of the cover The safety objective shall be to prevent access to the blade whilst it is still moving. This can be achieved by one of the following solutions: solution similar to 5.2.1.1.1; limiting the severity of the risk as set out in the firsts two indents of 5.2.1.1.3 and the following: either a tool shall be required for the cover removal;
or the design shall impose the operator to adopt a safe system at work and prevent impulsive opening of the cover, e. g. by requiring the use of both hands for the opening (see an example in Figure 9).
