Overview

EN 60335-2-47:2003/A12:2024 is a CENELEC amendment specifying safety requirements for commercial electric boiling pans (marmites) used in professional foodservice settings. It amends EN 60335-2-47:2003 and Part 1 (EN 60335-1) provisions, and was approved by CENELEC in August 2024. The standard covers electrically operated commercial boiling pans (not for household use) rated up to 250 V single‑phase (phase to neutral) and 480 V for other supplies. Typical users include restaurants, canteens, hospitals, bakeries and butcheries.

Key topics and technical requirements

  • Scope & intended user: Focuses on reasonably foreseeable hazards for trained users and, where relevant, expert operators. Excludes household appliances and generally does not address child use.
  • Electrical limits: Rated voltage thresholds defined for single‑phase and other supplies (≤250 V and ≤480 V respectively).
  • Noise: Emission sound pressure level is considered acceptable if LpA ≤ 70 dB(A); noise is not treated as a primary hazard.
  • Marking & instructions: Manuals must state intended use, operation, maintenance, operator training needs, PPE guidance (e.g., for hot food splashes), warnings about slippery floors, and that repairs be carried out by competent persons. Reasonably foreseeable misuse must be addressed with warnings (e.g., disconnect power during cleaning/maintenance).
  • Protection against access to live parts: Test probe 18 (EN 61032) is not applicable unless the appliance is installed in an area open to the public.
  • Construction & lids: Lids require at least one handle; hinge/stop design must prevent accidental closure (click stop, counterbalance, or opening ≥100°). Compliance checked with a 20 N force test.
  • Ergonomics: Working height recommended between 695 and 980 mm; controls must be visible, reachable and guarded against accidental actuation.
  • Hygiene (Annex ZAA): Defines food, splash and non‑food areas, cleaning requirements and exemptions where operating temperatures exceed 82 °C (and some fastener exemptions at >100 °C). Fluid category per EN 61770: Category 2 (no cleaning system) or Category 3 (with cleaning system).
  • Power‑driven parts (Annex ZE): Additional requirements for appliances with moving parts; interlocks and guards tested for durability (e.g., 5 000 cycles at 5 cycles/min where specified).

Practical applications - who uses this standard

  • Manufacturers of commercial boiling pans - design, assembly and safety compliance.
  • Test laboratories and conformity assessors - type testing, inspection and certification to CENELEC/EN requirements.
  • Procurement and compliance officers in foodservice, hospitality and healthcare - selecting compliant equipment.
  • Service and maintenance personnel - following instructions and repair competence requirements.
  • Regulatory bodies and national committees implementing the amendment into national standards.
